Everyone has a specific meal or two that they consider “comfort food.” Whether it’s your mom’s chili, grandma’s famous sauce, a slice of cheesecake at your favorite restaurant, good ol’ Kraft Mac n’ Cheese, warm, fresh-baked chocolate chip cookies, or hot buttered toast.
Certain foods bring back wonderful memories from childhood or important events or just give you that warm and fuzzy feeling of security & comfort.
My Favorite Comfort Foods
One of those meals for me is tomato soup and grilled cheese.
I have loved that combination since I was little. My mom would make it for me on the weekends for lunches and even for a quick dinner on occasion. Classic Campbell’s Tomato Soup is so creamy, sweet, and smooth paired with a hot and toast grilled cheese made with thick whole grain bread and smoked cheese. My mouth is watering just thinking about it!
I had an intense craving for tomato soup and grilled cheese recently. Maybe it’s the continuous cold spell we’ve been experiencing? They call in “unseasonably cold” weather…and I am not a fan. But, any excuse to eat warm comfort foods is A-OK with me.
I headed to my local grocery store to pick up some affordable, healthy ingredients to make tomato soup from scratch. You’d be surprised at the all the unnecessary added ingredients in what should be a simple can of soup…just take a look:
Wheat flour? HFCS? In soup? Naaaaah. You don’t need any of that to make a healthy tomato soup that’s JUST if not BETTER than classic Campbell’s.
Better Than Campbell’s Tomato Soup
Plus, all my gluten-free friends out there can’t even enjoy a simple bowl of Campbell’s tomato soup because of the added wheat. But that’s okay. That’s why I’m here and am sharing this easy, healthy gluten-free recipe that’s bound to be a hit with the whole family.
Did I mention it’s CHEAPER per serving than Campbell’s soup AND vegan? SCORE.
10 Minute Tomato Soup – Better Than Campbell’s
The BEST homemade tomato soup you’ll ever have! This copycat Campbell’s recipe is vegan, gluten-free, low in fat & calories, and is ready in LESS than 10 minutes.
- Prep Time: 5 minutes
- Cook Time: 10 minutes
- Total Time: 15 minutes
- Yield: 6–8 servings 1x
Instructions
Over high heat, place tomatoes, broth, tomato paste, spices, and veggies in a large soup pot and stir well. Bring mixture to a boil and turn down to medium heat. Place tofu in the pot and crumble up it up by using a wooden spoon and mashing it on the sides of the pot. Stir again and let everything heat through for another 5 minutes or so.
Using a heat safe blender (like a Vitamix), blend the soup in batches until creamy and smooth. Serve hot with homemade grilled cheese!
Notes
To make my healthy gluten-free grilled cheese:
Take 2 slices of whole grain gluten-free bread, top with desired low-fat vegan cheese (I like Follow Your Heart Smoked Gouda), grill sandwich using a mini George Foreman grill or a panini maker.

I am in NO WAY exaggerating when I say this is the BEST tomato soup I’ve ever had. It’s sweet, creamy, and has the perfect texture. It’s also SO easy to make (less than 10 minutes!) with only 5 ingredients. Plus, you’re getting a hefty dose of plant-based protein from the use of tofu to thicken it and make it creamy.

Does it matter what veggies you add to this?
Celery, onions, and carrots are best because they are super neutral and since everything gets pureed you can taste them. But I’ve also had success with cabbage and broccoli slaw. But the more neutral the better!
